Never stop baking over one missing ingredient

You are halfway through a recipe and realize the buttermilk is gone, or the carton has one egg instead of three. Most baking staples have a reliable stand-in you can build from pantry basics. This calculator stores the classic swaps for six of the most-missed ingredients โ€” buttermilk, baking powder, self-rising flour, eggs, brown sugar and sour cream โ€” and scales each one to the exact amount your recipe calls for, so you are not doing fraction math with flour on your hands.

How the swaps work

Each substitution uses the standard ratios bakers rely on. Buttermilk is an acid (lemon juice or vinegar) topped up with milk. Baking powder is baking soda plus cream of tartar. Self-rising flour is plain flour with baking powder and salt whisked in. When you change the amount, every part scales together so the chemistry stays balanced. Results are guidance for home baking โ€” textures and flavors can vary slightly from the original.

How to use it

  1. Choose the ingredient you have run out of from the drop-down.
  2. Type the amount your recipe needs into the amount box.
  3. The unit (cups, teaspoons or eggs) updates to match that ingredient.
  4. Read the scaled substitute and follow the short prep note underneath.

FAQ

Will substitutes taste exactly the same?
Very close for most recipes. A homemade buttermilk swap behaves the same in pancakes or cake, though delicate recipes may show a subtle difference.
Can I scale to odd amounts like 1.5 cups?
Yes. Type any number and every part of the substitute is multiplied for you, rounded to friendly baking fractions.
Is the egg swap good for every recipe?
Applesauce works well when the egg is for moisture and binding. For recipes that rely on eggs for structure or leavening, results will be denser.
